Step I
The groves reveal the optimal time for early harvest olives, typically when the olives are still green, yielding maximum flavor and nutrients. As the time nears, family members gather and prepare for the intensive harvesting period. Olives are carefully handpicked to avoid bruising to preserve the quality of the olive. Gentle rakes then comb through branches to allow overlooked olives to fall onto nets beneath trees, which are then collected from the nets and placed in baskets.
Step II
Freshly picked olives are quickly transported to the mill to prevent fermentation and oxidation. Olives are thoroughly washed and sorted to ensure only the purest olives are used for pressing.
Step III
The olives are first crushed into a paste. The olive paste is then slowly mixed to allow oil droplets to blend, all while maintaining a low temperature to preserve the oil's flavor and nutrients. The oil is extracted using a mechanical press without applying heat to retain its nutritional properties. Lastly, the freshly pressed olive oil is filtered to remove any remaining solid particles and is immediately bottled.
